Seafood Nutrition Partnership dietitian Valerie Agyeman reminds us that seafood, both fish and shellfish, is an important part of a healthy and balanced eating routine. You are going to love this flavorful Salmon Chowder. Heart-warming on cold days, this recipe is also heart-healthy with essential omega-3s. It uses Bluehouse Salmon, which is packed with nutrients and omega-3s EPA + DHA, which have heart, brain and eye health benefits. Not only that, it’s planet-friendly, delicious and extremely mild. Stay cozy!
Ingredients:
  • 3 tbsp unsalted butter
  • 3 stalks celery, minced
  • 1 small onion, minced
  • 1 cup carrots, chopped
  • 1 jalapeño, thinly sliced
  • 1 tsp garlic, minced
  • 1 bunch scallions, finely chopped
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • 1 tbsp cornstarch
  • 2 cups canned corn
  • 2 cups half and half
  • 1.5 lbs Bluehouse Salmon, skin discarded and cut into 1-inch pieces
Instruction: 
  • In large pot, melt butter over medium heat
  • Add celery, onions, carrots, jalapeños, garlic and scallions and cook, stirring often, until softened, about 8 minutes. Add the broth, salt and pepper and bring to a simmer
  • In small bowl, whisk cornstarch into two tablespoons of water to form a slurry. Stir the cornstarch slurry into the broth and bring to a boil. Let the soup boil for about 2-3 minutes to thicken
  • Turn the heat down to a gentle simmer, and stir in the corn and half and half. Layer the raw salmon on top of the simmering soup and cover with a lid
  • Simmer for 10 minutes or until the salmon is cooked through
  • Top with fresh cilantro and croutons and enjoy!

Ingredients:

  • 1.2 lb Bluehouse Salmon
  • 1/2 cup extra virgin olive oil
  • salt and pepper, to taste
  • 1 blood orange, thinly sliced
  • 1 lemon, thinly sliced
  • 1/2 red onion, sliced into thin rings
  • 3 garlic cloves, thinly sliced
  • Handful of rosemary sprigs

Instructions:

  • Preheat oven to 425 degreed F
  • On a large sheet pan or baking dish add salmon
  • Top salmon with olive oil, salt and pepper
  • Decorate salmon with citrus slices, onion rings, sliced garlic, rosemary and half of the fresh herbs
  • Bake for 15-20 minutes until the salmon is flaky and cooked through
  • Garnish with additional fresh herbs and serve

This parmesan crusted salmon is kid and adult approved
If there is one thing that almost any kid will eat, its cheese. Our parmesan-crusted salmon and linguini side will make both you and your kiddos happy. Hearty and delicious, and easy too. For busy parents, this recipe only takes a few minutes to prep and get into the oven. Bake some veggies alongside the salmon, and you have a balanced meal for the whole family. Perfect for picky adults too. Adding a side of linguini will make this dish a comfort-food fest! We hope you enjoy this family-friendly recipe that even the pickiest of eaters will love. On to the recipe:

Salmon Ingredients:

  • 6 oz skinless salmon
  • 7 oz fresh vegetables
  • olive oil, to taste
  • salt, to taste
  • pepper, to taste
  • 1 egg

Parmesan Crust Ingredients:

  • ¼ cup panko breadcrumbs
  • ¼ cup grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • salt, to taste

Preparation

  1. Preheat oven to 400˚F
  2. In a medium bowl, mix the parmesan crust ingredients.
  3. In a separate bowl, whisk egg.
  4. Dredge the salmon in the egg, then parmesan.
  5. Lay the salmon on a baking sheet. Lay vegetables beside the salmon. Drizzle with olive oil, then season with salt and pepper.
  6. Bake for 10-12 minutes.
   
The Everything Bagel Salmon: better than bagel and lox?
You’ve probably heard of the classic bagel and lox, but what about this low carb version of the well-seasoned staple? By taking your favorite bagel toppings and seasoning your salmon with them you can quickly elevate a simple recipe. Oh yes, we’re excited just thinking about it. All you have to do is sprinkle sesame seeds, poppy seeds, garlic, or whatever other bagel toppings you want onto your salmon and bake. So easy!   • 2 tablespoon sesame seeds (can be a mixture of white and black sesame seeds)
  • 1 tablespoon dried minced garlic flakes
  • 1 tablespoon dried minced onion flakes
  • 1 tablespoon poppy seeds
Preparation
  • Preheat oven to 450F. Place parchment paper or silicone liner on a rimmed baking sheet
  • Add the salmon fillets to the baking sheet and top with a thick coating of everything bagel seasoning (about 2 tablespoons).
  • If you are adding a veggie, place the vegetable on the baking sheet as well and sprinkle with salt.
  • Bake at 450F for 12 minutes
  • Remove and enjoy hot or cold with your favorite sides
