Guest Blog: Blood Orange Salmon Recipe by Seafood Nutrition Partnership
Seafood Nutrition Partnership dietitian Valerie Agyeman reminds us that seafood, both fish and shellfish, is an important part of a healthy and balanced eating routine. This citrusy orange salmon dish is a very easy way to prepare salmon, and has become a staple of mine. The recipe calls for blood oranges, but any form of citrus will work making it easily adaptable to every season, so you can enjoy this salmon year round! The end result is a platter so vibrant and packed with nutrients to keep you feeling great. Bluehouse Salmon is packed with nutrients and omega-3s, which have heart, brain and eye health benefits. Not only that, it’s planet-friendly, delicious and extremely mild.
Ingredients:
- 1.2 lb Bluehouse Salmon
- 1/2 cup extra virgin olive oil
- salt and pepper, to taste
- 1 blood orange, thinly sliced
- 1 lemon, thinly sliced
- 1/2 red onion, sliced into thin rings
- 3 garlic cloves, thinly sliced
- Handful of rosemary sprigs
Instructions:
- Preheat oven to 425 degreed F
- On a large sheet pan or baking dish add salmon
- Top salmon with olive oil, salt and pepper
- Decorate salmon with citrus slices, onion rings, sliced garlic, rosemary and half of the fresh herbs
- Bake for 15-20 minutes until the salmon is flaky and cooked through
- Garnish with additional fresh herbs and serve
