Grilling Salmon 101 with Dennis Prescott

Grilled Salmon - a culinary delight that never fails to taste amazing when served in a restaurant or even from your own backyard! We know that grilling salmon can be tricky whether you’re a curious novice or a grilling enthusiast, but we are here to help. We asked our Brand Ambassador, Dennis Prescott, some important questions about grilling salmon and he gave us some great tips and tricks that could help you create your own 5-star grilled salmon dish from home. Here’s his advice:
  • What temperature should I set my grill at?  
My preference when grilling salmon is to preheat my grill to 425 degrees F when cooking salmon filets. This results in a beautiful golden outside and perfectly cooked through inside to the filets, every single time.
  • What cut of salmon is best for grilling? 
For me, this comes down to personal preference and the specific recipe you’re preparing. As I love a big table filled with folks excited about a Bluehouse Salmon feast, I’ll often cook a whole side of salmon on the grill. If cooking for just a few, skin-on salmon filets are my preference of choice.
  • How long should I cook salmon on the grill? 
When cooking protein of all kinds, the best practice is to cook to temperature, rather than time. It guarantees that your salmon will be cooked perfectly to your specific liking! The best practice here is to use a meat thermometer, and be ever present at the grill, checking every few minutes to ensure proper doneness. For me, my preference is grilling my salmon to a medium doneness, around 135-140 degrees F (checking with a meat thermometer inserted into the thickest part of the salmon), and pulling from the grill around 125-130 degrees F. The internal temperature of the fish will continue to rise as it rests to a perfect 135 degrees.
  • Should I use marinade when grilling salmon? 
Marinades are an incredible way to infuse extra flavour into your salmon. I’ll often marinade my salmon for several hours in the fridge before grilling, cutting down on cook time when preparing dinner and adding that extra bit of deliciousness we all love. Are they necessary? Absolutely not! Bluehouse salmon tastes incredible on its own. If not marinading specific to a recipe, my typical simple but delicious grilling preparation is coating the salmon in a little olive oil, lemon zest, thyme, salt and pepper, and it’s absolutely perfect!
  • Should I leave the skin on or remove it? 
Both skin on or off will certainly work, but I tend to almost always prefer to grill my salmon with the skin on. The skin provides a protective layer between the salmon’s flesh and hot grill, releases natural fat onto the grill grates helping it stop from sticking, and salmon skin is super delicious!
  • Should I oil my grill grates first? 
Oiling your grill grates will help stop the food from sticking. I use a neutral oil, dripped in a little paper towel, then use tongs to rub onto the grill grates just before placing my salmon on the grill.

It’s important to know how to make the right choices when it comes to purchasing seafood. Whether you're a seasoned connoisseur or a curious novice, we've got you covered. We asked our Brand Ambassador, Omnivorous Adam a few of your burning questions about buying salmon at your local seafood counter. Here's his guide:
  • How much salmon should I order for 1 person? 2 people? A family of four?
I like to say 8 ounces or a half pound portion per person. Like any other protein, the fish will shrink slightly when cooked. I always lean towards more food then not enough, but that’s just me.
  • What should I look for at the seafood counter to make sure I’m choosing sustainably raised salmon?
A lot of markets are good about providing labels about where the fish is from and/or how it’s raised which is helpful. Sustainable food comes from a place or operation that works to minimize environmental impacts on the food that they create and ensures a certain level of quality and fair working conditions.
  • What color should salmon be when I purchase it?
It depends on the type of salmon, but I prefer a fish with good inter-muscular fat and a pretty orange, maybe even pink color. I’m not the biggest fan of super lean, deeply orange salmon because I feel that they tend to dry out easily and have a sometimes unpleasantly strong flavor.
  • Why choose fresh salmon over frozen?
This depends on a number of factors. Freezing fish can damage its flesh and cause it to weep moisture as it thaws which makes you end up with a withered, sad fish. Flash freezing can negate some of that damage and keep the fish firmer in better shape. However, in my experience a fresh fish pulled right from the water is undefeated.
  • How long can fresh salmon be kept in my fridge once purchased?
That depends on how long the market was sitting on it before you purchased it. My rule of thumb is within 2 days of purchasing it, but it just depends. Use your nose, if it doesn’t smell good, don’t eat it. If it doesn’t smell like anything, then it’s fresh.
  •  What should fish look and feel like so I know that it’s fresh?
It should be vibrant in color, whichever that is supposed to be. The flesh should be firm to the touch. If buying a whole fish the gills should be bright pink and the eyes clear and unclouded. If the fish is oddly slimy or mucusy, pass on it.

Spring Salmon Recipes to Save!
One of our favorite things about Bluehouse Salmon? Its versatility! From salmon bowls to sushi to salads, there are so many ways to enjoy this heart-healthy protein. With the season of Spring in full swing, we picked out some of our most unique Bluehouse Salmon recipes to whip up this season. 
Here are five salmon recipes you need to save for the Spring:
1. Smoked Salmon Tart 
This smoke salmon tart is made using our cold smoked salmon.  The recipe is courtesy of @omnivorousadam. This is the perfect recipe for quiche enthusiasts. You can also cut the work in half by purchasing pie crust. 
Ingredients:
300g Short Crust Pastry
350g New Potatoes, cooked
1 1/4 cup Cream
2 Eggs
3 Tbsp Fresh Dill, chopped
Zest of one Lemon
200g Smoked Salmon, torn
Capers for garnish
Kosher Salt, to taste & Black Pepper, to taste
Technique:
1. Preheat the oven to 375F. Roll out the pastry and line the tart tin with it, trim off any excess. Line the tin with a piece of parchment paper and fill with beans. Place the tin on a baking sheet, fill with pie weights or dried beans and blind bake the pastry for 10 minutes. Remove the paper and weights then bake for 5 minutes more.
2. Peel the potatoes the slice into quarter inch half moon shaped pieces. Arrange the potatoes and smoked salmon pieces one after the other in the tart. Whisk together the cream, eggs, dill, lemon zest, pepper and a pinch of salt. Pour the egg mixture over into the tart tray to the “shoulders” of the potatoes, there will be extra - reserve for a later use.
3. Bake for 25 minutes, until the potatoes are lightly browned on top and fork tender. Let cool for 10 minutes. Garnish with a drizzle of olive oil and more fresh dill. Use a bread knife to carefully slice into pieces, serve warm and CRUSH.

   2.  Greek Salmon Salad 
This Greek salmon salad is a fresh and simple meal. You can customize it however you please using your favorite Mediterranean-inspired ingredients. Add your favorite olives or use spinach as the base when recreating this salad. This recipe is courtesy of nxtlevelcooking
All you need is:
  • lettuce
  • tomato
  • onions

      3.  Stuffed Salmon
  This meal will is packed with goodness and is sure to leave you satisfied. Stuffed Salmon, courtesy of collegenutritionist, is a unique preparation perfect for meal prepping. 
  Instructions:
1. Preheat oven to 425 degrees F
2. Line a baking sheet with parchment paper or tin foil and spray it with an oil spray
3. Poke holes in potato with a fork and add potato to the baking sheet
4. Bake for 50 minutes
5. Mix 1/2 cup spinach, ricotta, and salt & pepper in a bowl
6. Top @BluehouseSalmon with more salt & pepper and pat in into the fish
7. Slice a pocket into a side of the salmon and fill it with the ricotta spinach mixture
8. Add salmon to the baking sheet 40 minutes in (so the potato has 10 minutes left)
9. While salmon is baking, make your side salad with spinach, feta, pecans, red wine vinegar, and more salt & pepper
10. Assemble a bowl or plate with your salad, salmon, and potato, and enjoy!
11. No dairy? Use dairy-free pesto instead of the ricotta (available at most stores) and oil instead of feta

   4.  Sweet and Spicy Salmon

 5. Baked Pineapple Salmon
This baked pineapple salmon recipe is the perfect balance of sweet and spicy. The bold flavors of the chili sauce compliment the sweet fruit flavor. This recipe is ideal for a family meal. 
 To re-create: 
-Preheat your oven to 350°, and line a baking sheet with foil and cooking spray. In the center of the foil, lay pineapple slices in an even layer. 
-Season both sides of the salmon with salt and pepper and place on top of pineapple slices.
-In a small bowl, whisk together butter, chili sauce, cilantro, garlic, ginger, sesame oil, and red pepper flakes. Brush all over salmon fillet.
-Bake for about 25 minutes or until salmon is cooked through. Switch the oven to broil, and broil for 2 minutes, or until fish is slightly golden.
-Garnish with sesame seeds and green onions, and serve with lime wedges.
